Egg Nog Pound Cake

Cake Ingredients:
1 box yellow cake mix
1 small package instant vanilla pudding mix
3/4 cup canned egg nog
3/4 cup vegetable oil
4 eggs
1/2 teaspoon nutmeg
Powdered Sugar

Icing Ingredients
1/3 cup butter
2 cups powdered sugar
1 1/2 teaspoon vanilla
2-4 Tablespoons of water

Cake Preparation:

Combine first 4 ingredients; mix on low speed in mixer until moistened. Add eggs and nutmeg. Beat for 4 minutes on high speed. Pour into a greased and floured bundt pan or tube pan. Bake at 350 F. for 40 to 45 minutes until a toothpick insterted into the middle of the cake comes out clean.Cool for 10 minutes; remove from pan. Cool completely and sprinkle with powdered sugar or drizzle with powdered sugar icing.

Icing Preparation:

Melt butter in saucepan.  Stir in powdered sugar and vanilla.  Add water 1 tablespoon at a time.  Mix until smooth and of a desired consistency (a thick syrup).  Drizzle over cooled cake.

Peanut Apple Toasties

Ingredients:
2 slices bread, toasted and buttered
2 tablespoons peanut butter
1/2 apple, sliced
lemon juice
cinnamon
1 teaspoon brown sugar

Preparation:Spread peanut butter on one side of each of the two slices of toasted bread. Dip apple slices in lemon juice. Arrange apple slices on peanut butter and sprinkle with brown sugar and cinnamon. Put on a baking sheet and place under broiler. Broil 3-5 minutes or until lightly browned.  Makes 1 serving.(Source:  www.nationalpeanutboard.org)
